Nutritional assessment of a complementary diet prepared from germinated maize, cowpea and pigeon pea

Abstract:

The complementary diets prepared from germinated maize, cowpea and pigeon pea were compared with Nutrend, a vegetable commercial food. The formulated diets were fed to weaning rats for a period of 28 days. Food intake, animal weights, tissue weights and nitrogen contents were assessed. The protein efficiency ratio, net protein ratio, feed efficiency ratio, biological value, true digestibility and net protein utilization were calculated. The results showed that the formulated diets supported growth of the animals. The protein efficiency ratio of germinated maize-cowpea-pigeon pea and Nutrend were comparable to those of standards, which stipulated a value of 2.1. The biological value, net protein utilization and true digestibility of the diets were compared with those of casein. Therefore, it was concluded that germination and mixing of digestible plant proteins offer a good potential in the formulation of complementary foods for the feeding of infants and children.
