Comparative studies on muscle cellularity and flesh quality of two mandarin fish species, Siniperca chuatsi and Siniperca scherzeri

Abstract:

The mandarin fish (CMF) is the most important commercial species in China as well as in eastern Asia due to the high meat quality and appealing taste. Two CMF species, Siniperca chuatsi (mandarin fish) and Siniperca scherzeri (Korean perch), exhibit high commercial values for aquaculture. However, fish consumers are more favorable to S. scherzeri than S. chuatsi. The work using multiple approaches comparatively analyzed the cellular and biophysical characteristics of muscle textures, and the nutritional profiles in the muscle of the two CMF species. We here provided direct evidences that the S. scherzeri exhibits certain superior characteristics, especially on higher fiber density, higher collagen and PUFAs (polyunsaturated fatty acids) content etc., which may contribute to its better textural property and commercial values. With an increase in the demand for a quality supply of fish, it could be concluded that there is a potential for expanding commercial utilization of the CMF species in aquaculture.
