Quality assessment, phytochemical profile and antioxidant activity of fresh and dried pomegranate peel powders

Abstract:

A significant association (P>0.05) was observed between fresh and dried pomegranate peel powders on physicochemical and functional properties, nutrient content, phytochemical profile and antioxidant activity. Fresh pomegranate peels exhibited a good phytochemical profile, antioxidant capacity of 84.2%, a IC50 value of 59% and vitamin C content of 14.45 mg, respectively. Upon analyzing dry samples, the cabinet dried pomegranate peel powder showed better vitamin C (10.20 mg), antioxidant capacity (82.8 %) and the IC50 value was found to be 61.17%. The sundried sample was found to have a better phytochemical profile and antioxidant capacity (75.6%) than cabinet dried pomegranate peel powders which had an IC50 value of 73.23%. Shade dried samples had a higher value for vitamin C (9.70 mg) than sundried pomegranate peel powder but a lower phytochemical profile compared to two other methods of drying. Antioxidant capacity (72.83%) was similar to the value of sundried sample and the IC50 value was found to be 70.1%. The Fresh pomegranate peel powder showed better antioxidant activity than the dried samples. Among the dried samples, sundried sample exhibited a better phytochemical profile. Pomegranate peel powder is a good potentialsource of natural antioxidantto prevent free radical mediated oxidative damages and can be used to formulate nutraceuticals.
