Wine contamination by mycotoxin enniatin B from Fusarium tricinctum (Corda) Sacc.

Abstract:

In search of bioactive nature compounds produced by endophytic fungi in a vineyard of China, a fungi strain identified as Fusarium tricinctum (Corda) Sacc. was isolated from the inner part of branches of the Vitis vinifera L. On PDA medium the fungi produced toxin enniatin B (ENN-B), the toxic potential of which is well known. An HPLC method was established to detect ENN-B in wine. The result showed ENN-B in white wine made out of the grapes harvested in the said vineyard. It came quite as a surprise that it had resisted the complicated procedure of wine fermentation. Red wine of the same origin and two commercial brands, analysed as a control, proved to be free of ENN-B.
